Leviticus 2:13 page 1 by ric Gustafson
Some have said that salt curing started during the last ice age 12000 years ago. Neanderthals made use of salt. They used rock salt to feast on woolly mammoth flesh, root vegetables and berries. The Dead Sea and salt springs and sea marshes across Europe and Asia would have provided salt to be put on deer, fish and fruits.
After salting and cooking, curing came next to be discovered. Drying meat was preserved by salt. Homo Sapiens appeared between 150,000 and 300,000 years ago. We have an overbite suited cutting cooked meat rather than tearing and a weak jaw to chew tough foods. Compared with other animals, we have poor sense of smell. We do have refined taste faculties. We can taste and enjoy a wide range of foods.
