Stuffed hard boiled eggs started in the 15th century. The following century, eggs were boiled, the yolks removed and then mixed with spices. The yolk mixture was then put back into the shells.
In the 17th century, the eggs were seasoned with pepper and mustard. Because the spices were heated up, the nickname deviled eggs started.
In 1791, the term deviled eggs began to appear in print. As the years have gone by, a variety of spices have gone on top of the eggs including paprika, parsley and chives.
