When you talk about alcohol fermentation, you are talking about yeast converting sugar to alcohol. You can add or pitch yeast and create a variation. You can get sparkling cider when you combine bubbles and alcohol. To have non sparkling cider, the carbon dioxide must leave the liquid.
Fresh apple juice is put into fermentation vessels or containers. Most popular are glass, oak, steel and plastic drums. It takes three months to a year for the juice to ferment.
Cider can be packaged in cans or in glass bottles. Both are popular.
